Tonight I created a versatile new recipe that was really easy to throw together. This is recipe is gluten free and paleo. If you add rice or cheese, it is no longer paleo. I enjoyed mine over salad greens with 1/2 cup of cooked rice mixed in. You could also serve it in hard or soft taco shells or tortilla as a burrito or quesadilla.
2 lb. ground turkey
1 tsp oregano
1 tsp cumin
2 tsp chili powder
6 oz diced red pepper
8 oz diced onion
6 oz tomato sauce
Optional: Cooked brown rice, salad greens, cheese
Brown turkey in a large skillet breaking into small pieces as it cooks and is no longer pink. Remove turkey from skillet leaving the remaining juices from turkey to saute the vegetables in. Add the vegetables and saute until softened. While it is cooking combine the tomato sauce and spices then add to vegetable mix. Finally add the turkey back into the pan and stir all ingredients together.
*6 servings = 262 calories, 8g carbs, 12g fat and 33g protein.
