I’m baaaack! Did you miss me?! Friday we returned from our summer vacation to beautiful South Carolina which included a few days in Charleston and 5 days on Kiawah Island. We will definitely return some day. Beautiful!

Do you know what I miss most when I go away? My morning smoothie! I really love starting my day with that boost of nutrients. If you need a little guidance on building a smoothie, check out this post.

While our meals were reasonably healthy while away, there was the daily drinking and dessert. So, we stayed in Saturday evening for a healthy home cooked meal rather than go out (which is very rare!). I made a really simple dinner that met everyone’s dietary desires: BLT sandwiches and a BLT (or BLS for spinach rather than lettuce) salad. Everyone loves bacon, right?! Rather than have mine stacked in with the bread and mayo, I opted to put my bacon and tomato atop a big bowl of spinach and mix it with a homemade balsamic vinaigrette (1/3 cup of olive oil, 3 TBS balsamic vinegar and 1 TBS dijon mustard). I also grilled some sliced patty pan squash sprinkled with a little seasoned salt mix.

It really can be quite simple to make a healthy dinner in short time that makes everyone in the house happy.

Last night we enjoyed burgers on the grill, grilled corn and a mix of cubed sweet potatoes and red onion in the grill basket.

Today we are having Stuffed Sweet Bell Peppers and Tuesday we are having homemade chicken salad from a rotisserie chicken mixed with red grapes in lettuce cups. That’s as far as the plan reached for this week with school starting Wednesday. After Labor Day weekend with school underway and vacations over I hope to have a better sense of our new schedule and be back to weekly planning. I love a schedule and a plan!
