This is a great recipe that I was introduced to by fellow CrossFitter, Jenny.  She shared it with the group when we participated in a 4-Week fitness and nutrition challenge.  It was a big hit with all participants who tried it.

1 lb. ground turkey
1 large sweet potato, peeled and cubed
2 TBS coconut oil
1/2 yellow onion, diced
1/2 sweet bell pepper, diced
1/2 cup diced celery
1 tsp cinnamon
salt and pepper to taste


  1. Roast sweet potatoes on a cookie sheet with 1 TBS of coconut oil, salt and pepper at 375 until potatoes are cooked through, but not mushy (approx. 30 minutes).
  2. While potatoes are roasting, sauté chopped onions, peppers and celery in 1 TBS of coconut or olive oil until onions are translucent.
  3. Add ground turkey, mix and cook until turkey is no longer pink.
  4. Add cinnamon and sweet potato, mix and serve.

*Jenny says this freezes well.  So, double the recipe and freeze some for another time.
