This is a great recipe that I was introduced to by fellow CrossFitter, Jenny. She shared it with the group when we participated in a 4-Week fitness and nutrition challenge. It was a big hit with all participants who tried it.
1 lb. ground turkey
1 large sweet potato, peeled and cubed
2 TBS coconut oil
1/2 yellow onion, diced
1/2 sweet bell pepper, diced
1/2 cup diced celery
1 tsp cinnamon
salt and pepper to taste
- Roast sweet potatoes on a cookie sheet with 1 TBS of coconut oil, salt and pepper at 375 until potatoes are cooked through, but not mushy (approx. 30 minutes).
- While potatoes are roasting, sauté chopped onions, peppers and celery in 1 TBS of coconut or olive oil until onions are translucent.
- Add ground turkey, mix and cook until turkey is no longer pink.
- Add cinnamon and sweet potato, mix and serve.
*Jenny says this freezes well. So, double the recipe and freeze some for another time.
