1 lb. chicken breasts
2 cans black beans
1 can diced tomatoes
1 cup brown rice
Taco seasoning (Make your own by mixing together 1 teaspoon chili powder and 1/2 teaspoon each of cumin, oregano, and salt.)
1 cup of water

Place all ingredients in crock pot and cook on low heat for 6 hours.  How simple is that?!

NOTE: This is great for leftovers too!  Try it right out of the pot one night and then in a burrito the next!
