As I said in last week’s post, boy is June a busy time of year! This week I chose three recipes that are super easy and quick. Do you have any “go-to” healthy recipes? Please share! I’m always looking for new ideas.
Slow Cooker Sausage Cassoulet (GF): I made this recipe in April and froze half of it. I made it without turnip, parmesan and breadcrumbs.
Shrimp w/ Rao’s Marinara over wilted spinach (GF & Paleo): The hub is away which usually means shrimp night at our house. I always keep a bag of peeled and deveined shrimp in the freezer which can be defrosted in minutes. I simply put the frozen shrimp in a bowl and fill it with water. They are defrosted in minutes. I cook them in Rao’s marinara and then usually serve them over spinach or zoodles.
Taco Salad (GF & Paleo): I cook ground beef or turkey in a large sauté pan with my homemade mexican seasoning (2 teaspoon chili powder and 1 teaspoon each of cumin, oregano, and salt) then add it to greens, veggies, etc. and top with a mix of salsa and sour cream.
