I hope all my mom followers had a fabulous Mother’s Day! I started the day with a fun and lengthy workout with a great friend. I was especially happy when the sun finally came out in the afternoon so I could take a long walk through the nearby Medfield State Hospital property and then sit out in the sun and read a book. We ended the day with dinner out and ice cream – not to mention a really nice bottle of wine. 😉 I had a great day.
Here’s what’s cookin’ this week:
Slow Cooker Beef Shank (Paleo & GF): OK, I’ve never made and maybe never eaten beef shank, but tonight I gave it a go. Over the winter some came in my monthly meat delivery from Walden Local Meat that I needed to use. I tried this slow cooker recipe excluding the carrots and celery. I served it over roasted broccoli and I wanted it to be a little less stew like and more sauce like. It all came together beautifully!
Shrimp & Zoodles (Paleo & GF): The hub is going to be away over night which means it’s a great occasion for shrimp night. Very simple “recipe”. I sauté shrimp in a pan with Rao’s marinara and serve with zucchini noodles.
Grilled Chicken & Spinach Salad (Paleo & GF): I’ll be adding some feta cheese to mine which is not Paleo friendly, but oh so good. 😉
