Sunday afternoon was cooler than Saturday. So we ended the weekend with our first fire in the fire pit and a family dinner of Grilled Steak & Asparagus with Simple Spinach Salad – This is a “go-to” meal on warm weather Sundays. I have so much steak saved in the freezer from my monthly meat delivery from Walden Local Meats I need to use. I don’t do much grilling in the winter! My simple spinach salad is simply baby spinach leaves, carmelized onions and cherry tomatoes with my homemade balsamic vinaigrette (1/3 cup olive oil, 3 TBS balsamic vinegar and 1 TBS dijon mustard).
Tonight we had Tuscan White Beans & Kale – This is GF, but not Paleo due to the white beans. I made a few minor adaptations to the recipe. I baked the a bunch of chicken breasts lightly seasoned rather than sautéing, I only used 1 TBS of olive oil to saute the onions, I used 1 tsp of dried thyme and used 10 ounces of kale.
Steak & Slaw Soft Tacos – This can be GF & Paleo depending on your soft taco selection. No recipe for this one. I’m using left over sliced grilled steak from Sunday. The slaw mix is shredded cabbage with a dressing of salsa and sour cream. What else you put that mix on/in or add to it is up to you!
Wednesday I’m making Stuffed Bell Peppers – This is GF, but not Paleo unless you exclude the rice. I am putting shredded zucchini in my portion rather than rice.
AND Thursday will be left overs or shrimp!
