I can’t believe school starts tomorrow. So sad… I can never understand it when I hear parents rejoicing about it. I have no interest in all the activities resuming and becoming a glorified taxi service again over enjoying more time in the sun. Boo! Also, with the beginning of each new school year I realize how little time I have left before my oldest leaves for college. Now THAT makes me really sad.

OK… OK… Before I’m reduced to a crying puddle and you tune out completely, I’ll switch gears and share that this week I’m not officially cooking, but rather defrosting. I looked at the family schedule and decided that using some of the items I have stocked up in the freezer would be a great idea. Having a few meals available in the freezer to fall back on when you would like to enjoy a healthy meal, but don’t have a lot of time on your hands is such a relief.
