Ready for the long weekend?! I am!!!

I don’t think I’m alone when I confess to not planning on much cooking over the 4th of July holiday weekend. We are headed to VT this morning through Tuesday.

Are you headed to or hosting any barbecues over the weekend? Here are a couple of recipes I recommend:

Mediterranean 7 Layer Dip
Southwestern Black Bean Salad
Sweet Potato, Corn & Feta Salad
Another simple fave this year: cubed watermelon with minced mint mixed in. YUM!

And once we get home…

Tuesday: We will stop at Whole Foods on our way home for some supplies for the week. We will grab some dinner in their prepared foods section to bring home.

Wednesday: Barbecue Chicken Salad This recipe prompted a similar idea. In addition to the broccoli slaw, I will start with a bed of mixed greens. Instead of peaches I’m going to substitute pineapple chunks. I will likely skip the feta too.

Thursday: Farmer’s Market fish and produce
